Café Della Sera is a 

specialty and single-origin Arabica coffee grown under the shade of native trees in the border mountains between Panama and Costa Rica at an altitude of 1050m above sea level.  This sustainable farming method allows:

Harvesting by hand allows each coffee cherry to be carefully selected at its optimal point of ripeness. By doing so, it is ensured that only the tastiest and most aromatic fruits reach the production process. This careful selection is key to obtaining a coffee with a complex and balanced flavor profile, characteristic of Della Sera coffee.

Once harvested, the Cafe Della Sera beans are carefully pulped and subsequently placed in fermentation tanks for 18 hours.  Fermentation is a biochemical process in which natural microorganisms break down the coffee cherry pulp surrounding the bean. This process is essential to separate the beans from the pulp and prepare them for drying.
